Cocoa Mojo Chia Pudding
1 cup full-fat coconut milk*
1 cup unsweetened almond milk *
4 T Cocoa Mojo
1-2 tbsp maple syrup
Pinch of Celtic sea salt 0r other sea salt
1/2 cup chia seeds
Combine the milks, Cocoa Mojo, maple syrup and pinch of salt in a mixing bowl or a blender. If using a mixing bowl, whisk vigorously to blend well. If in a blender, pulse on low to mix the ingredients together. Add the chia seeds and, again, mix well or with just a few brief pulses in the blender.
Transfer to small jars, serving bowls or decorative serving containers. Be sure to scrape the sidewalls of the blender well. Refrigerate overnight or for at least 4 hours.
Add any decorative, complimentary toppings of your choice: mint, berries, whipped cream, chocolate shavings, coconut flakes. Bon Appe’tit!
*Feel free to try other milks of your choice. Use just almond milk, use just coconut milk, or experiment with cashew milk or hemp milk.
