Coconut Milk Powder, 0.25% Sodium Caseinate (a milk derivative) and .25% Maltodextrin (as emulsifiers)
It is scientifically impossible to have pure 100% Organic Coconut Milk Powder. As we strive to offer products free of emulsifiers, we feel that the benefits of the Coconut Milk Powder outweigh the tiny amounts of emulsifiers in this product. We are working dilegently in R&D to remedy this situation.

What are the benefits of Coconut Oil?
Coconut oil is extracted from the meat of the coconut. When blended, this meat becomes coconut milk, so our Coconut Milk Powder actually contains coconut oil. Coconut oil is different from other oils because it contains medium-chain fatty acids, which make it easier to absorb. Many common American oils are made from seeds, like soybeans, rapeseeds (canola), safflower seeds, sunflower seeds, etc. These seed oils contain mostly triglycerides containing long chain fatty acids. Once eaten, these long-chain fatty acids need to be emulsified by bile salts. Bile salts are produced by the liver, stored in the gallbladder, and deposited into the small intestine as needed for digestion. They are the emulsifying agents that draw the fats into the intestinal tract where lipase, a digestive enzyme, can work on them.
Since coconut oil contains mostly medium-chain triglycerides, it is directly absorbed into the portal vein and goes into the liver without requiring lipase or bile salts for digestion. In the liver, these medium-chain triglycerides (MCTs) support the immune system and help to cleanse the body.
This simplified absorption makes coconut oil very easy to digest. People without gallbladders, or who cannot digest fats well (such as people with cystic fibrosis) will be able to use coconut oil more easily. Research has shown that the elderly and the very young thrive on formulas containing coconut oil. In addition, the MCTs in coconut oil promote microbial balance throughout the body.
Coconut oil is burned for energy rather than stored as fat on the body. For this reason, coconut oil promotes a healthy metabolism and balanced blood sugar. Coconut oil is a great addition to a low-carb diet, because it provides some of the energy that would have been found in carbohydrates.
Our Coconut Milk Powder is over 65% Coconut Oil.
What is "good fat?"
Coconut Milk Powder contains medium-chain fatty acids from a natural, whole-food source. These are GOOD FATS. These fatty acids create and provide energy for our bodies.
Is Coconut Milk Powder sweetened?

Coconut Milk Powder is a great substitute for coffee creamers. Also, experiment with using it in your favorite Indian and Thai recipes!

Why Does Coconut Milk Powder contain sodium caseinate and maltodextrin?
These are used in very small amounts as emulsifiers to turn coconut milk into a powder. Currently, IT IS NOT SCIENTIFICALLY POSSIBLE to make Coconut Milk Powder without these ingredients. Believe us, we would be the first to jump on it. That said, the practitioners we have consulted feel that the benefits of Coconut Milk Powder outweigh the negative aspects of these two ingredients.
Is Coconut Milk Powder organic?
NO. It is not scientifically possible for Coconut Milk Powder to be 100% organic because of the emulsifiers. We are working in R&D to change this fact, but so far have been unsuccessful.
Is Coconut Milk Powder vegan?
NO. Coconut Milk Powder IS NOT VEGAN! It contains sodium caseinate derived from a milk source.
What is the best way to consume Coconut Milk Powder?
You can add Coconut Milk Powder to virtually anything. If you want to just make coconut milk, the best thing to do is to use a blender to constitute it and then store it in the fridge. You can add it to smoothies, and you can add it to your coffee or tea. If you try to consititute it in coffee or tea you will have to stir quite well and might still have chunks of powder. This is normal, but you can blend your beverages to eliminate this issue.
Why does Coconut Milk Powder clump in the jar?
This is the nature of the product and is completely normal. We could add more emulsifiers to the product to eliminate this, but doing so would degrade the quality of the product.
We like to eat them as treats that dissolve in your mouth.
